Ingredients

  • 2.5 pounds beef chuck roast
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 3 tablespoons olive oil
  • 4 large garlic cloves
  • 1 large onion
  • 1 large carrot
  • 2 medium celery stalks
  • 12 ounces cremini mushrooms
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 leaf bay leaf
  • 1 teaspoon fresh thyme
  • 2 tablespoons fresh parsley

Directions

Step 1

Cut the beef chuck roast into 1-inch cubes and season with 1 teaspoon of salt and 0.5 teaspoon of black pepper.

Step 2

Heat 2 tablespoons of olive oil in a large Dutch oven over medium-high heat. Add the beef in batches, allowing each piece to brown on all sides. Remove the browned beef and set it aside.

Step 3

Reduce the heat to medium and add the remaining tablespoon of olive oil. Mince the garlic cloves and chop the onion. Add them to the pot and sauté for about 3 minutes until the onion is translucent.

Chop the carrot and celery stalks into small pieces and add them to the pot. Cook for another 5 minutes, stirring occasionally.
