Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 3 garlic cloves, minced
  • 3 celery stalks, chopped
  • 2 large carrots, chopped
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon worcestershire sauce
  • 2 bay leaves
  • 1 teaspoon thyme leaves
  • 1 large turnip, peeled and cut into cubes
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Season the beef cubes with salt and pepper evenly.

Step 2

In a large pot, heat olive oil over medium-high heat. Add the beef cubes and brown them on all sides, working in batches if necessary. Once browned, remove the beef and set aside.

Step 3

In the same pot, add the onions and garlic. Sauté them until the onions become translucent, about 5 minutes.

Step 4

Stir in the celery and carrots, cooking them for another 5 minutes.

Step 5

Pour in the beef broth and add the tomato paste, stirring until the paste is fully incorporated.

Step 6

Add the worcestershire sauce, bay leaves, and thyme to the pot.

Step 7

Return the beef to the pot and bring everything to a boil, then reduce the heat to a simmer.

Step 8

Cover the pot and let it gently simmer for about 1 hour.

Step 9

Add the turnip cubes to the pot, stirring to mix them in.

Step 10

Continue simmering the stew for an additional 45-60 minutes or until the beef and turnips are tender.

Step 11

Remove the bay leaves before serving.

Step 12

Garnish with freshly chopped parsley before serving.
