  • 1 large, chopped Onion
  • 3 chopped Celery stalks
  • 1 large, chopped Carrot
  • 1 large, peeled and cubed Turnip
  • 4 cups Beef broth
  • 2 tablespoons Tomato paste
  • 1 teaspoon, dried Thyme
  • 0.5 teaspoon, dried Rosemary
  • 1 Bay leaf
  • 2 tablespoons, chopped Parsley

Directions

Step 1

Start by trimming excess fat from the beef chuck roast and cut it into 1-inch cubes.

Step 2

Heat olive oil in a large pot over medium-high heat. Season beef with salt and black pepper.

Step 3

Brown the beef in batches to avoid overcrowding, searing each side for about 4-5 minutes. Transfer the browned beef to a plate and set aside.

In the same pot, add garlic, onion, and celery. Sauté for about 3 minutes until onion is translucent.
