Ingredients

  • 2 pounds beef ribs
  • 2 tablespoons olive oil
  • 1 large onion
  • 2 celery stalks
  • 3 garlic cloves
  • 2 medium carrots
  • 1 medium zucchini
  • 8 cups beef broth
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley

Directions

Step 1

Heat olive oil in a large pot over medium-high heat.

Step 2

Season the beef ribs with salt and black pepper, then add to the pot. Brown them on all sides, about 5-7 minutes.

Remove the ribs from the pot and set aside.

In the same pot, add chopped onion and sauté for 3-4 minutes until translucent.
