Ingredients

  • 1.5 pounds beef stew meat
  • 2 tablespoons olive oil
  • 1 medium yellow onion, chopped
  • 2 medium carrots, chopped
  • 2 units celery stalks, chopped
  • 3 units garlic cloves, minced
  • 8 cups beef broth
  • 2 tablespoons tomato paste
  • 1 unit bay leaf
  • 1 teaspoon dried thyme
  • 3 cups zucchini noodles (zoodles)
  • 1 cup frozen green beans
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup fresh parsley, chopped

Directions

Step 1

Heat 1 tablespoon of olive oil in a large pot or Dutch oven over medium-high heat.

Step 2

Add the beef stew meat in batches to avoid overcrowding and brown them on all sides. Transfer the browned meat to a plate and set aside.

In the same pot, add the remaining olive oil, followed by the chopped onion, carrots, and celery. Sauté for about 5 minutes, until the vegetables start to soften.
