Ingredients

  • 2 tablespoons olive oil
  • 1.5 pounds beef chuck, cut into 1-inch cubes
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 medium onion, chopped
  • 3 large garlic cloves, minced
  • 2 pieces celery stalks, diced
  • 2 medium carrots, diced
  • 1 medium zucchini, diced
  • 6 cups beef broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 whole bay leaf
  • 2 tablespoons chopped fresh parsley

Directions

Step 1

Heat the olive oil in a large pot over medium-high heat.

Step 2

Season the beef cubes with salt and black pepper.

Step 3

Add the beef to the pot and brown on all sides, about 5-7 minutes. Remove from pot and set aside.

In the same pot, add the chopped onion and cook until translucent, about 3-4 minutes.

Add the minced garlic, diced celery, and diced carrots. Cook for an additional 5 minutes, stirring occasionally.
