  • 1 medium Onion, chopped
  • 2 Garlic cloves, minced
  • 2 Celery stalks, chopped
  • 1 medium Zucchini, chopped
  • 1 cup Cauliflower florets
  • 1 cup Canned black beans, rinsed and drained
  • 1 cup Canned cannellini beans, rinsed and drained
  • 4 cups Vegetable broth
  • 2 tablespoons Tomato paste
  • 1 teaspoon Thyme
  • 1 teaspoon Rosemary
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 cups Spinach leaves, roughly chopped

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the chopped onion and minced garlic; sauté until the onion becomes translucent, about 3-4 minutes.

Stir in the chopped celery, zucchini, and cauliflower florets. Cook for another 5 minutes, stirring occasionally.

Add the rinsed and drained black beans and cannellini beans to the pot.
