Ingredients

  • 4 pieces Nori sheets
  • 2 cups Cauliflower rice
  • 1 tablespoon Rice vinegar
  • 1 teaspoon Sugar substitute
  • 0.5 teaspoon Salt
  • 0.5 cup Fresh cucumber
  • 1 medium Avocado
  • 8 ounces Fresh tuna or salmon, sashimi-grade
  • 0.25 cup Soy sauce or tamari
  • 4 tablespoons Pickled ginger
  • 2 teaspoons Wasabi

Directions

Step 1

Place the cauliflower rice in a microwave-safe bowl and cover with a damp paper towel. Microwave on high for 3-4 minutes until tender. Let it cool slightly.

Step 2

In a small bowl, mix the rice vinegar, sugar substitute, and salt. Stir this mixture into the cooked cauliflower rice until well combined.

Step 3

Julienne the cucumber, and slice the avocado into thin strips. Cut the sashimi-grade tuna or salmon into thin strips, about 1/2 inch wide.

Step 4

Take a nori sheet and lay it shiny side down. Spread about 1/2 cup of the seasoned cauliflower rice diagonally across the nori, leaving a 1-inch border at the top corner.

Step 5

Place a few pieces of cucumber, avocado, and sashimi fish over the cauliflower rice.

Step 6

Carefully roll the nori sheet from the bottom left corner towards the top right corner, forming a cone shape. Use a small amount of water to seal the edge of the nori.

Step 7

Repeat with the remaining nori sheets and ingredients.

Step 8

Serve the hand rolls immediately with soy sauce or tamari, pickled ginger, and wasabi on the side for dipping.
