  • 2 cups Almond flour
  • 1/4 cup Coconut flour
  • 1 tablespoon Baking powder
  • 1 teaspoon Xanthan gum
  • 1/2 teaspoon Salt
  • 1/4 cup Unsalted butter
  • 4 ounces Cream cheese
  • 3 cups Shredded mozzarella cheese
  • 2 large Eggs
  • 8 ounces Deli ham
  • 1 optional Egg wash (1 egg beaten with 1 tablespoon water)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a medium bowl, mix together almond flour, coconut flour, baking powder, xanthan gum, and salt. Set aside.

Step 3

In a microwave-safe bowl, combine cream cheese, unsalted butter, and shredded mozzarella cheese. Heat in the microwave in 30-second intervals, stirring between each interval, until the mixture is completely melted and smooth.

Add the flour mixture to the melted cheese mixture and blend well. Beat in the eggs one at a time until the dough comes together. Knead gently with your hands if needed to fully incorporate.
