Ingredients

  • 1 cup Almond flour
  • 1.5 cups Mozzarella cheese (shredded)
  • 2 tablespoons Cream cheese
  • 1 large Egg
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Garlic powder
  • 0.5 cup Pizza sauce (sugar-free)
  • 0.5 cup Ham (diced)
  • 0.25 cup Pineapple chunks (unsweetened, drained)
  • 0.25 cup Red onion (thinly sliced)
  • 0.25 cup Bell pepper (thinly sliced)
  • 1 cup Mozzarella cheese (for topping)
  • 0.25 cup Fresh basil leaves

Directions

Step 1

Preheat the oven to 425°F (220°C).

Step 2

In a microwave-safe bowl, combine 1.5 cups of shredded mozzarella cheese and 2 tablespoons of cream cheese. Microwave for 1 minute on high, stir, and then microwave for another 30 seconds until cheese is fully melted and combined.

Step 3

Add the almond flour, egg, salt, and garlic powder to the melted cheese mixture. Stir until a dough forms. If dough is sticky, chill for 10 minutes.

Step 4

Place the dough between two sheets of parchment paper. Roll out into a thin crust, about 1/4 inch thick.

Step 5

Transfer the crust (still on parchment paper) to a baking tray and bake for 8-10 minutes until lightly golden.

Step 6

Remove the crust from the oven and spread the sugar-free pizza sauce over it.

Step 7

Sprinkle the diced ham, pineapple chunks, thinly sliced red onion, and bell pepper over the sauce.

Step 8

Top with 1 cup of shredded mozzarella cheese.

Step 9

Return to oven and bake for another 8-10 minutes until cheese is bubbly and golden.

Step 10

Remove from oven, garnish with fresh basil leaves, slice, and serve immediately.
