Ingredients

  • 2 cups almond flour
  • 1.5 cups mozzarella cheese, shredded
  • 2 tablespoons cream cheese
  • 1 teaspoon baking powder
  • 1 unit egg, large
  • 8 slices deli ham, thinly sliced
  • 4 slices cheddar cheese, sliced
  • 2 tablespoons butter, melted
  • 1 tablespoon sesame seeds (optional)

Directions

Step 1

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a microwave-safe bowl, combine shredded mozzarella cheese and cream cheese. Microwave for 1 minute, then stir until well combined and smooth.

Step 3

Add almond flour, baking powder, and the egg to the melted cheese mixture. Stir until the dough forms and is thoroughly mixed.

Step 4

Place the dough between two pieces of parchment paper. Roll it out into a rectangle about 1/4 inch thick using a rolling pin.

Step 5

Cut the dough into 8 triangles, similar to how you would cut for croissants.

Step 6

Place one slice of ham and half a slice of cheddar cheese onto each triangle.

Step 7

Starting at the wider end, roll the dough towards the pointed end to form a croissant shape.

Step 8

Place the rolled croissants onto the prepared baking sheet.

Step 9

Brush each croissant with melted butter and sprinkle with sesame seeds if using.

Step 10

Bake in the preheated oven for about 15-20 minutes until golden brown and flaky.

Step 11

Allow the croissants to cool for a few minutes before serving.
