Ingredients

  • 1 cup Almond flour
  • 0.5 cup Unsweetened almond milk
  • 3 Eggs
  • 0.25 teaspoon Salt
  • 2 tablespoons Butter
  • 4 slices Ham, thinly sliced
  • 0.5 cup Swiss cheese, shredded
  • 2 tablespoons Chives, chopped (optional for garnish)

Directions

Step 1

In a medium bowl, whisk together almond flour, almond milk, eggs, and salt until smooth to form the crepe batter.

Step 2

Heat a non-stick skillet over medium heat and melt 1/2 tablespoon of butter.

Step 3

Pour about 1/4 cup of the batter into the center of the skillet and immediately tilt the pan to spread the batter into a thin circle.

Cook for 2-3 minutes until the edges of the crepe begin to lift and the bottom is golden brown.

Using a spatula, gently flip the crepe and cook for another 1-2 minutes on the other side.

Transfer the cooked crepe to a plate and repeat with the remaining batter, adding more butter to the skillet as needed.
