Ingredients

  • 1 cup Coconut milk
  • 1 cup Almond milk
  • 2 tablespoons Erythritol sweetener
  • 0.5 cup Unsweetened gelatin dessert mix (variety of flavors like grape or mango)
  • 0.25 cup Shredded coconut
  • 0.25 cup Chia seeds
  • 0.25 cup Almonds
  • 0.5 cup Chopped fresh strawberries
  • 0.5 cup Chopped fresh mango
  • 2 cups Crushed ice
  • 1 teaspoon Ube (purple yam) extract
  • 2 scoops Low carb ube ice cream or sugar-free vanilla ice cream

Directions

Step 1

Prepare the gelatin dessert according to the package instructions, but omit any sugar. Allow it to set in the refrigerator for at least 2 hours or until firm. Once set, cut the gelatin into small cubes.

Step 2

In a small saucepan, mix coconut milk, almond milk, and erythritol sweetener. Warm over low heat, stirring until the erythritol has completely dissolved. Remove from the heat and let it cool.

Step 3

In a medium bowl, combine shredded coconut, chia seeds, and almonds. Mix well.

In each serving glass, layer the crushed ice to about 1/3 of the glass.
