Ingredients

  • 1 cup Almond flour
  • 2 tablespoons Milk powder
  • 0.5 teaspoon Baking powder
  • 3 tablespoons Heavy cream
  • 2 tablespoons Ghee (clarified butter)
  • 0.25 teaspoon Cardamom powder
  • 0.5 cup Sugar-free sweetener (granulated, such as erythritol)
  • 1.5 cups Water
  • 1 tablespoon Rose water
  • 1 tablespoon Almonds or pistachios (optional, for garnish)
  • 0 as needed Oil (for frying)

Directions

Step 1

Begin by preparing the syrup. In a saucepan, combine 1.5 cups of water and 0.5 cup of sugar-free sweetener. Stir the mixture over medium heat until the sweetener is fully dissolved.

Step 2

Once dissolved, add 0.25 teaspoon of cardamom powder and 1 tablespoon of rose water. Allow the syrup to simmer gently for about 5 minutes, then remove from heat and let it cool.

Step 3

For the gulab jamun dough, in a mixing bowl, combine 1 cup of almond flour, 2 tablespoons of milk powder, and 0.5 teaspoon of baking powder. Mix well to ensure there are no lumps.

Step 4

Add 2 tablespoons of melted ghee to the dry ingredients, followed by 3 tablespoons of heavy cream. Mix the ingredients together until a smooth, pliable dough is formed.

Step 5

Divide the dough into small, equal portions and roll each portion into a smooth ball. Ensure there are no cracks to prevent the gulab jamun from breaking while frying.

Step 6

Heat oil in a deep pan over medium flame. Once hot, gently add the dough balls to the oil, one at a time. Fry them until they are golden brown, ensuring to rotate them for even coloring. Maintain a moderate temperature so they cook thoroughly without burning.

Step 7

Once fried to a golden hue, remove the balls from the oil and allow them to drain on paper towels.

Step 8

While still warm, transfer the balls into the cooled syrup. Let them soak in the syrup for at least 30 minutes.

Step 9

Garnish with almonds or pistachios if using, and serve the low-carb gulab jamun at room temperature or slightly chilled.
