  • 1 cup Almond Flour
  • 0.25 cup Coconut Flour
  • 0.5 cup Erythritol or Monk Fruit Sweetener
  • 0.5 cup Heavy Cream
  • 0.25 cup Ghee (Clarified Butter)
  • 0.5 teaspoon Cardamom Powder
  • 2 tablespoons Chopped Nuts (Almonds, Cashews, or Pistachios)
  • 1 pinch Salt

Directions

Step 1

Start by greasing a small square or rectangular container with some ghee and set it aside.

Step 2

In a medium-sized non-stick pan, heat the ghee over medium heat.

Step 3

Once the ghee is melted, add almond flour and coconut flour and roast them on low-medium heat. Stir constantly for about 8-10 minutes until the mixture turns golden brown and emits a nutty aroma.

Step 4

Reduce the heat to low and add the heavy cream slowly while stirring continuously to avoid lumps.

Step 5

Mix in the erythritol or monk fruit sweetener, cardamom powder, and a pinch of salt. Continue stirring until the sweetener is dissolved completely and the mixture thickens. This should take around 5-7 minutes.

Now, add the chopped nuts and mix well. Allow the mixture to cook until it starts leaving the sides of the pan and forms a dough-like consistency, which will take about 2-3 more minutes.

Transfer the mixture into the greased container and spread it evenly with the back of a spoon or a spatula.

Let it cool completely to room temperature. Once cooled, refrigerate the gudpak for about an hour to set completely.

Remove from the refrigerator and cut into small squares or desired shapes before serving.

Store any leftovers in an airtight container in the refrigerator for up to one week.
