  • 5 pieces Shallots
  • 3 pieces Candlenuts
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Coriander powder
  • 0.5 teaspoon Red pepper flakes
  • 3 pieces Bay leaves
  • 1 teaspoon Salt
  • 0.5 teaspoon Pepper
  • 1 inch piece Fresh galangal
  • 3 pieces Kaffir lime leaves
  • 1 tablespoon Sugar-free sweetener like stevia
  • 200 ml Water

Directions

Step 1

Drain and rinse the young jackfruit. Cut it into bite-sized pieces and set aside.

Step 2

Cut the chicken thighs into large chunks and set aside.

Step 3

In a blender, combine garlic, shallots, candlenuts, turmeric powder, coriander powder, and red pepper flakes. Blend until a smooth paste forms.

Heat coconut oil in a large, heavy-bottomed pot over medium heat. Add the paste and sauté for about 5 minutes until fragrant.

Add the cut chicken to the pot and stir well to ensure the chicken is coated with the spices.
