Ingredients

  • 500 g Ground beef (80% lean)
  • 50 g Grated Parmesan cheese
  • 30 g Almond flour
  • 1 large Egg
  • 2 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Dried oregano
  • 1 tsp Kosher salt
  • 0.5 tsp Ground black pepper
  • 2 tbsp Fresh parsley, chopped
  • 1 tbsp Olive oil
  • 1 medium Zucchini, sliced into thick rounds
  • 1 large Bell pepper, cut into chunks
  • 10 whole Cherry tomatoes
  • 6 pieces Wooden or metal skewers

Directions

Step 1

Soak wooden skewers in water for at least 20 minutes, if using.

Step 2

In a large mixing bowl, combine ground beef, Parmesan cheese, almond flour, egg, garlic powder, onion powder, dried oregano, salt, pepper, and parsley. Mix until well combined.

Form the mixture into small meatballs, about the size of a golf ball. You should have approximately 18-20 meatballs.
