Ingredients

  • 1 pound firm white fish (cod or halibut)
  • 2 whole lemon
  • 3 tablespoons olive oil
  • 2 tablespoons fresh dill
  • 2 tablespoons fresh parsley
  • 3 cloves garlic
  • 0.5 teaspoon salt
  • 0.5 teaspoon pepper
  • 1 medium zucchini
  • 1 medium bell pepper
  • 1 medium red onion
  • 8 pieces Skewers (wooden or metal)

Directions

Step 1

Cut the fish into 1-inch cubes and place in a large bowl.

Step 2

Zest and juice one of the lemons, then add both zest and juice to the bowl with the fish.

Add olive oil, chopped dill, chopped parsley, minced garlic, salt, and pepper to the bowl. Mix until the fish is well coated. Cover and let marinate in the refrigerator for at least 15 minutes.
