Ingredients

  • 250 grams Haloumi cheese
  • 2 tablespoons Olive oil
  • 1 whole Lemon
  • 2 tablespoons Fresh parsley
  • 2 tablespoons Fresh mint
  • 0.25 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 clove Garlic

Directions

Step 1

Begin by preheating your grill or grill pan over medium-high heat.

Step 2

Slice the Haloumi cheese into approximately 1cm thick slices. This should give you about 8 slices from a 250g block.

Step 3

In a small bowl, mince the garlic clove finely, and transfer it to a larger mixing bowl.

Step 4

Juice the lemon into the mixing bowl, taking care to remove any seeds.

Step 5

Add olive oil, salt, and black pepper to the lemon and garlic mixture, and whisk together until well combined.

Step 6

Finely chop the fresh parsley and mint leaves, and add them to the mixing bowl. Stir the herb mixture thoroughly.

Step 7

Brush some of the olive oil mixture onto each side of the Haloumi slices.

Step 8

Place the Haloumi slices on the preheated grill. Grill each side for about 2-3 minutes, until marks appear and the cheese starts to brown. Be careful not to overcook, as Haloumi can become rubbery.

Step 9

Once grilled, remove the Haloumi from the grill and transfer to a serving platter.

Step 10

Drizzle the remaining lemon and herb dressing over the hot Haloumi slices.

Step 11

Serve immediately, garnished with extra fresh herb leaves if desired.
