Ingredients

  • 1 fillet Unagi (grilled eel)
  • 1 medium head Cauliflower
  • 2 tablespoons Rice vinegar
  • 1 tablespoon Swerve (or other sugar substitute)
  • 0.5 teaspoon Salt
  • 2 tablespoons Soy sauce
  • 2 tablespoons Mirin
  • 2 tablespoons Japanese sake
  • 1 teaspoon Wasabi
  • 1 sheet Nori sheets (seaweed)

Directions

Step 1

Rinse the cauliflower, cut it into florets, and pulse in a food processor until it resembles the texture of rice.

Step 2

Place the cauliflower 'rice' in a microwave-safe bowl and cover it with a lid or plastic wrap. Microwave on high for 3–5 minutes or until tender. Let it cool slightly.

Step 3

In a small bowl, mix rice vinegar, Swerve, and salt until dissolved.

Step 4

Combine the seasoned vinegar mixture with the cooked cauliflower rice, tossing to coat evenly. Set aside.

Cut the grilled eel fillet into 8 even strips.

In a small saucepan, combine soy sauce, mirin, and sake. Heat over medium flame until it starts simmering. Reduce the sauce slightly until it thickens.
