Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 3 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 3 cloves Garlic cloves, minced
  • 2 tablespoons Fresh parsley, finely chopped
  • 1 tablespoon Fresh thyme, finely chopped
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Lemon zest

Directions

Step 1

Preheat your grill to medium-high heat.

Step 2

In a small bowl, mix together 2 tablespoons of olive oil, lemon juice, minced garlic, parsley, thyme, salt, and pepper to create the marinade.

Step 3

Place the chicken breasts in a shallow dish and pour the marinade over them, ensuring each piece is well-coated. Let the chicken marinate for at least 10 minutes at room temperature.

Step 4

While the chicken is marinating, in another small bowl, combine the remaining 1 tablespoon of olive oil with the lemon zest. Set aside to use as a basting sauce.

Step 5

Once the grill is hot, place the chicken breasts on the grill. Cook each side for 6-7 minutes, or until the internal temperature reaches 165°F (75°C).

Step 6

During the last couple of minutes of grilling, brush the lemon zest olive oil mixture over the chicken for an extra burst of flavor.

Step 7

Remove the chicken from the grill and let it rest for a few minutes before serving.

Step 8

Serve the grilled chicken with a spoonful of any remaining marinade sauce over the top for added flavor.
