  • 2 pieces chicken breast
  • 2 medium bell peppers
  • 1 medium zucchini

  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Cut the chicken breasts into 1-inch cubes and set aside.

Core and cut the bell peppers into 1-inch pieces.

Step 3

Slice the zucchini into 1/2-inch thick rounds.

Peel and cut the red onion into 1-inch chunks.

In a large mixing bowl, combine olive oil, lemon juice, minced garlic cloves, dried oregano, dried thyme, salt, and black pepper to create the marinade.
