Ingredients

  • 2 pieces Large artichokes
  • 1 whole Lemon
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 3 whole Garlic cloves
  • 2 tablespoons Fresh parsley

Directions

Step 1

Start by preparing the artichokes. Rinse them under cold water and trim about 1 inch off the top and bottom stems.

Step 2

Peel away the tough outer leaves near the base of the artichokes.

Step 3

With a sharp knife, cut the artichokes in half vertically and remove the choke (the fuzzy center) using a spoon.

Step 4

Rub the cut surfaces of the artichokes with half the lemon to prevent browning.

Step 5

Fill a large pot with about 2 inches of water and bring to a boil. Add a steamer basket and place the artichokes inside.

Step 6

Cover and steam the artichokes for about 15 minutes until the petals are tender and can be peeled off easily.

Prepare your grill to medium-high heat.

In a small bowl, combine olive oil, the juice of the remaining half lemon, minced garlic, salt, and black pepper. Mix well.
