Ingredients

  • 2 cups Almond flour
  • 0.5 cup Coconut flour
  • 1 teaspoon Xanthan gum
  • 0.5 teaspoon Salt
  • 0.5 cup Butter, melted
  • 4 Eggs
  • 2 cups Heavy cream
  • 1 teaspoon Vanilla extract
  • 0.5 cup Stevia or Erythritol
  • 1 teaspoon Ground cinnamon

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking dish with parchment paper.

Step 2

In a large mixing bowl, combine the almond flour, coconut flour, xanthan gum, and salt.

Step 3

Add the melted butter to the dry ingredients and mix until crumbly.

Step 4

In a separate bowl, beat 2 eggs and mix them into the flour mixture until a dough forms.

Step 5

Divide the dough in half. Roll out one half between two sheets of parchment paper to fit the bottom of your baking dish.

Step 6

Place the dough in the prepared baking dish, trimming any excess edges.

Step 7

For the filling, beat the remaining 2 eggs in a saucepan. Whisk in the heavy cream, stevia or erythritol, and vanilla extract.

Step 8

Cook the mixture over medium heat, stirring constantly, until it thickens into a custard. This should take about 8 minutes.

Step 9

Pour the custard over the dough in the baking dish.

Step 10

Roll out the remaining dough to create the top layer and place it over the custard, sealing the edges.

Step 11

Sprinkle the top with ground cinnamon.

Step 12

Bake for 35-40 minutes or until the top is golden brown and firm.

Step 13

Allow to cool slightly, then slice into servings and enjoy your low-carb Greek Bougatsa.
