Ingredients

  • 1 cup Almonds
  • 1 cup Walnuts
  • 1 cup Pecans
  • 0.5 cup Unsweetened shredded coconut
  • 0.5 cup Pumpkin seeds
  • 0.5 cup Sunflower seeds
  • 2 tablespoons Chia seeds
  • 2 tablespoons Flaxseed meal
  • 1 teaspoon Cinnamon
  • 0.25 teaspoon Salt
  • 1 teaspoon Vanilla extract
  • 0.5 cup Almond butter
  • 0.25 cup Coconut oil
  • 0.25 cup Sugar-free maple syrup

Directions

Step 1

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a food processor, pulse the almonds, walnuts, and pecans until roughly chopped.

Step 3

Transfer the chopped nuts into a large mixing bowl. Add the unsweetened shredded coconut, pumpkin seeds, sunflower seeds, chia seeds, flaxseed meal, cinnamon, and salt, mixing until well-combined.

Step 4

In a small saucepan over low heat, combine the almond butter, coconut oil, and sugar-free maple syrup. Stir until the mixture is smooth and well combined.

Step 5

Pour the wet mixture over the dry ingredients and add the vanilla extract. Mix until all the ingredients are evenly coated.

Scoop a tablespoon of the mixture and roll it into a ball using your hands. Place the ball on the prepared baking sheet and flatten slightly. Repeat with the remaining mixture.
