  • 8 ounces Raw shrimp, peeled and deveined
  • 1 cup Cherry tomatoes, halved
  • 1 cup Spinach leaves
  • 0.25 cup Red onion, thinly sliced
  • 10 leaves Basil leaves, fresh
  • 0.25 teaspoon Red pepper flakes

Directions

Step 1

Preheat your oven to 425°F (220°C). Line a pizza pan with parchment paper.

Step 2

Cut the cauliflower into florets and place them in a food processor. Pulse until the cauliflower resembles rice grains.

Transfer the riced cauliflower to a microwave-safe bowl and microwave for 5-6 minutes until soft. Let it cool, then place it in a clean towel and squeeze out as much moisture as possible.
