Ingredients

  • 1 pound Beef chuck, cut into 1-inch cubes
  • 2 cups Bottle gourd (lauki), peeled and cubed
  • 2 tablespoons Coconut oil
  • 1 large Onion, finely chopped
  • 4 Garlic cloves, minced
  • 1 tablespoon Fresh ginger, grated
  • 1 cup Canned coconut milk
  • 1 tablespoon Curry powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Turmeric powder
  • 0.5 teaspoon Ground black pepper
  • 1 teaspoon Salt
  • 0.25 cup Fresh cilantro leaves, chopped
  • 1 cup Water

Directions

Step 1

In a large pot or Dutch oven, heat the coconut oil over medium-high heat.

Step 2

Add the chopped onion and sauté until translucent, about 5 minutes.

Step 3

Stir in the minced garlic and grated ginger and cook for an additional 1 minute until fragrant.

Step 4

Add the curry powder, ground cumin, ground coriander, turmeric powder, and black pepper to the pot. Stir constantly for 1-2 minutes to toast the spices.

Step 5

Add the beef cubes to the pot, stirring well to coat them with the spice mixture. Cook until the beef is browned on all sides, about 8-10 minutes.

Step 6

Stir in the cubed bottle gourd, ensuring it is mixed well with the beef and spices.

Step 7

Pour in the coconut milk and water, and then add the salt. Stir to combine all the ingredients.

Step 8

Bring the mixture to a simmer, then reduce the heat to low, cover the pot, and let it cook for 40-45 minutes, or until the beef is tender and the gourd is cooked through.

Step 9

Taste and adjust seasoning if necessary.

Step 10

Serve hot, garnished with fresh cilantro leaves.
