Ingredients

  • 1 cup Almond flour
  • 0.25 cup Coconut flour
  • 1 teaspoon Xanthan gum
  • 0.25 teaspoon Salt
  • 0.5 cup Hot water
  • 2 tablespoons Erythritol
  • 0.25 cup Black sesame seeds
  • 1 cup Unsweetened coconut milk

Directions

Step 1

In a mixing bowl, combine the almond flour, coconut flour, and xanthan gum with 1/4 teaspoon of salt. Stir until evenly mixed.

Step 2

Gradually add hot water to the flour mixture, stirring continuously with a spatula until a dough forms. You may need slightly more or less water depending on consistency.

Step 3

Knead the dough lightly on a clean surface. It should be cohesive and smooth without being sticky.

Step 4

Cover the dough with a damp cloth and allow it to rest while preparing the filling.

Step 5

In a small pan over medium heat, toast the black sesame seeds lightly until aromatic, about 3 minutes.

Step 6

Grind the toasted sesame seeds in a mortar and pestle or spice grinder until fine. Mix with erythritol.

Step 7

Divide the dough into small, even portions, approximately the size of a ping pong ball.

Step 8

Flatten each portion into a disc and place 1/2 teaspoon of sesame filling in the center, then carefully wrap the dough around the filling, sealing the edges to form a ball.

Step 9

Bring 4 cups of water to a gentle boil in a pot and simmer the Tangyuan until they float to the surface, about 5 minutes.

Step 10

In a separate pot, gently warm the unsweetened coconut milk over low heat. Do not let it boil.

Step 11

Serve the Tangyuan in bowls, ladled with the warmed coconut milk and enjoy!
