  • 2 cups Almond flour
  • 0.25 cup Coconut flour
  • 1 tablespoon Psyllium husk powder

  • 1 teaspoon Xanthan gum
  • 0.5 teaspoon Salt
  • 0.5 cup Unsalted butter, chilled and cut into cubes
  • 1.5 cups Mozzarella cheese, shredded
  • 2 tablespoons Cream cheese, softened
  • 2 large Eggs
  • 1 medium Egg yolk (for egg wash)
  • 1 tablespoon Water

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine almond flour, coconut flour, psyllium husk powder, baking powder, xanthan gum, and salt.

Step 3

In a microwave-safe bowl, add shredded mozzarella cheese and cream cheese. Microwave for about 1 minute, stirring halfway through, until cheeses are melted and uniform.

Add the melted cheeses to the dry ingredient mixture along with two large eggs. Mix well until a dough forms. It may be sticky.
