Ingredients

  • 1 cup almond flour
  • 2 tablespoons coconut flour
  • 1 teaspoon baking powder
  • 1 quarter cup granulated erythritol
  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 3 tablespoons unsweetened almond milk
  • 1 half cup powdered erythritol
  • 2 tablespoons heavy cream

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a medium-sized mixing bowl, combine the almond flour, coconut flour, and baking powder. Stir until well mixed.

Step 3

Add the granulated erythritol to the dry ingredients and combine.

Step 4

In a separate bowl, whisk together the melted butter, vanilla extract, eggs, and unsweetened almond milk until smooth.

Step 5

Gently fold the wet ingredients into the dry ingredients, mixing until well incorporated and a thick dough forms.

Step 6

Using your hands, roll the dough into small balls, about the size of a tablespoon, and place them onto the prepared baking sheet.

Step 7

Bake in the preheated oven for 8-10 minutes, or until the donut holes are lightly golden and firm to the touch.

Step 8

While the donut holes are baking, prepare the glaze by whisking together the powdered erythritol and heavy cream in a small bowl until smooth.

Step 9

Allow the donut holes to cool slightly, then dip each one into the glaze, ensuring they are well-coated.

Step 10

Place the glazed donut holes on a wire rack to set and cool completely before serving.
