Ingredients

  • 6 eggs
  • 1 cup unsweetened almond milk
  • 0.5 cup almond flour
  • 0.25 cup coconut flour
  • 4 ounces cream cheese, softened
  • 2 tablespoons erythritol or preferred low-carb sweetener
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 2 tablespoons butter

Directions

Step 1

Preheat your oven to 400°F (200°C). Place a 10-inch oven-safe skillet in the oven to preheat as well.

Step 2

In a blender, combine eggs, almond milk, almond flour, coconut flour, cream cheese, erythritol, vanilla extract, baking powder, and salt.

Step 3

Blend the mixture on high speed for about 1 minute until the batter is smooth and well combined.
