Ingredients

  • 0.5 cup Unsweetened almond milk
  • 4 large Eggs
  • 0.75 cup Almond flour
  • 0.25 cup Coconut flour
  • 2 tablespoons Granulated erythritol or other low-carb sweetener
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 2 tablespoons Butter
  • 2 Lemon wedges
  • 1 tablespoon Powdered erythritol

Directions

Step 1

Preheat your oven to 425°F (220°C). Place a medium-sized ovenproof skillet or cast iron pan in the oven as it heats.

Step 2

In a blender, combine the almond milk, eggs, almond flour, coconut flour, granulated erythritol, vanilla extract, and salt. Blend until the batter is smooth and free of lumps.

Step 3

Once the oven is preheated, carefully remove the hot skillet. Add the butter to the skillet, swirling it around until it is melted and the pan is coated.
