  • 2 large Egg yolks
  • 1 teaspoon Dijon mustard
  • 1 tablespoon Apple cider vinegar
  • 0.25 teaspoon Sea salt
  • 2 medium Garlic cloves
  • 0.5 cup Olive oil
  • 0.5 cup Avocado oil
  • 1 tablespoon Lemon juice

Directions

Step 1

Start by separating the egg yolks from the whites. Reserve the whites for another recipe.

Step 2

In a food processor or blender, combine the egg yolks, Dijon mustard, apple cider vinegar, and sea salt.

Step 3

Peel and finely mince the garlic cloves. Add the minced garlic to the egg yolk mixture.

Pulse the mixture several times until the ingredients are well combined.

While the food processor or blender is running on low speed, very slowly drizzle in the olive oil and avocado oil. This should be done drop by drop initially, then a thin stream, allowing the mixture to emulsify and thicken.
