Ingredients

  • 1 large head Cauliflower
  • 2 tablespoons Olive oil
  • 3 large Garlic cloves
  • 3 stalks Green onions
  • 2 tablespoons Soy sauce (low sodium)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 large Eggs
  • 1 teaspoon Sesame oil

Directions

Step 1

Start by preparing the cauliflower. Remove the leaves and cut the cauliflower into large chunks.

Step 2

Using a food processor, pulse the cauliflower chunks until they resemble rice grains. Be careful not to over-process.

Step 3

Mince the garlic cloves and thinly slice the green onions. Set them aside separately.

Step 4

In a large pan, heat 2 tablespoons of olive oil over medium heat.

Step 5

Add the minced garlic to the hot oil and sauté for about 30 seconds until fragrant, being careful not to burn it.

Step 6

Add the cauliflower rice into the pan with the garlic, stirring well to incorporate the flavors.

Step 7

Pour in the soy sauce, salt, and black pepper. Stir everything together and cook for about 5-7 minutes or until the cauliflower is tender but not mushy.

Step 8

Create a well in the center of the pan by pushing the cauliflower to the sides. Crack the eggs directly into the well.

Step 9

Scramble the eggs lightly in the center, and once they are set, stir them through the cauliflower rice.

Step 10

Add the sliced green onions and drizzle the sesame oil over the mixture.

Step 11

Stir everything to combine well, adjust seasoning if necessary, and serve hot as a side dish or a light main course.
