Ingredients

  • 300 grams Cauliflower rice
  • 2 large Eggs
  • 50 grams Parmesan cheese
  • 50 grams Almond flour
  • 30 grams Butter
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Chives

Directions

Step 1

Begin by grating a head of cauliflower using a food processor or a hand grater until it resembles rice-like grains. You will need about 300 grams of cauliflower rice.

Step 2

In a non-stick skillet, heat 10 grams of butter over medium heat. Add the cauliflower rice and sauté for about 5-7 minutes, stirring occasionally, until the cauliflower is tender and any moisture has evaporated. Transfer to a bowl and let it cool slightly.

Step 3

In a mixing bowl, whisk together 2 large eggs, then stir in the cooled cauliflower rice.

Step 4

Add 50 grams of grated Parmesan cheese, 50 grams of almond flour, 0.5 teaspoon of salt, and 0.25 teaspoon of black pepper to the cauliflower mixture. Stir until all ingredients are well-combined into a thick batter.

Step 5

Melt the remaining 20 grams of butter in the skillet over medium heat.

Step 6

Spoon the cauliflower mixture into the skillet, shaping it into small, round, flat galettes about 10 cm in diameter, pressing gently with the back of a spoon to flatten them.

Step 7

Cook the galettes for 3-5 minutes on each side until golden brown and firm, flipping carefully with a spatula.

Step 8

Once cooked, transfer the galettes to a plate lined with paper towels to drain any excess butter.

Step 9

Garnish with 2 tablespoons of freshly chopped chives before serving.

Step 10

Serve warm as a low-carb alternative to traditional Galette de Riz, perfect as a side dish or a light main course.
