Ingredients

  • 2 cups Cauliflower rice
  • 0.5 cup Parmesan cheese, grated
  • 0.5 cup Mozzarella cheese, shredded
  • 0.75 cup Almond flour
  • 2 large Eggs
  • 1 teaspoon Oregano, dried
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 cup Olive oil
  • 0.5 cup Marinara sauce, for dipping

Directions

Step 1

Begin by cooking the cauliflower rice in a nonstick skillet over medium heat for about 5-7 minutes until softened and any excess moisture has evaporated. Allow it to cool slightly.

Step 2

In a large mixing bowl, combine the cooked cauliflower rice, Parmesan cheese, mozzarella cheese, one egg, oregano, garlic powder, salt, and pepper. Mix thoroughly until well combined.

Step 3

Using your hands, shape the mixture into small balls, approximately 1.5 inches in diameter. Place them on a tray lined with parchment paper as you form them.

Step 4

In a separate shallow bowl, beat the remaining egg. Place the almond flour in another shallow dish.

Step 5

Dip each risotto ball first in the beaten egg, then roll it in the almond flour, ensuring it's fully coated. Return the coated balls to the parchment-lined tray.

Step 6

In a large skillet, heat olive oil over medium heat. Once hot, carefully add the risotto balls. Fry them in batches, if necessary, turning occasionally, until all sides are golden brown and crispy, about 4-5 minutes per batch.

Step 7

Use a slotted spoon to transfer the fried arancini to a paper towel-lined plate to drain any excess oil.

Step 8

Serve the low carb fried risotto balls warm with marinara sauce on the side for dipping.
