  • 4 Green onions (sliced)
  • 2 tbsp Soy sauce (or tamari for gluten-free option)
  • 1 cup Frozen peas and carrots
  • 2 Eggs
  • 1 tsp Sesame oil
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Directions

Step 1

1. Start by preparing the cauliflower rice if using fresh cauliflower. Remove the leaves and core from a medium head, chop it into florets, and pulse in a food processor until it resembles rice grains. This should yield about 4 cups.

2. Slice the sausage into small bite-sized pieces.

3. Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the sausage pieces and cook until browned and fully cooked, about 6-8 minutes. Remove sausages from the pan and set aside.
