Ingredients

  • 1 large head Cauliflower
  • 1 tablespoon Sesame oil
  • 1 tablespoon Olive oil
  • 3 cloves Garlic
  • 1 medium Carrot
  • 0.5 cup Frozen peas
  • 2 stalks Green onions
  • 2 large Eggs
  • 2 tablespoons Soy sauce
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Sesame seeds

Directions

Step 1

Cut the cauliflower into florets and place in a food processor. Pulse until the texture resembles rice. You may have to do this in batches depending on the size of your food processor.

Step 2

In a large skillet or wok, heat the sesame oil and olive oil over medium heat.

Step 3

Add the minced garlic and sauté for about 30 seconds until fragrant.

Step 4

Add the diced carrot and cook for 2-3 minutes until it starts to soften.

Step 5

Stir in the cauliflower rice, and continue to cook, stirring frequently, for about 5 minutes until the cauliflower is tender.

Step 6

Add the frozen peas and sliced green onions to the pan, and stir to combine. Cook for an additional 2 minutes.

Step 7

Push the cauliflower mixture to one side of the pan. On the empty side, crack the eggs and scramble them with a spatula until fully cooked.

Step 8

Combine the eggs with the cauliflower mixture and stir in the soy sauce, along with the salt and black pepper to taste.

Step 9

Cook for another minute or two to blend the flavors.

Step 10

Sprinkle with sesame seeds before serving, and garnish with extra green onions if desired.
