Ingredients

  • 1 medium head Cauliflower
  • 2 large Eggs
  • 0.5 cup Grated Parmesan cheese
  • 0.5 cup Almond flour
  • 0.25 cup Chopped fresh parsley
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Onion powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 cup Olive oil

Directions

Step 1

Begin by cutting the cauliflower into florets and steam them until they are very tender, about 10 minutes.

Step 2

Once tender, transfer the cauliflower to a large bowl and mash with a potato masher until smooth. Allow the mash to cool slightly.

Step 3

In a separate bowl, beat the eggs lightly. Add the egg mixture to the cooled mashed cauliflower along with the grated Parmesan cheese, almond flour, chopped parsley, garlic powder, onion powder, salt, and black pepper. Mix until well combined.

Shape the cauliflower mixture into small croquettes, about the size of a golf ball, and gently flatten them slightly.
