Ingredients

  • 500 grams Cauliflower florets
  • 150 grams Almond flour
  • 50 grams Grated Parmesan cheese
  • 1 large Egg
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 100 grams Unsalted butter
  • 10 leaves Fresh sage leaves
  • 2 tablespoons Olive oil

Directions

Step 1

Start by steaming the cauliflower florets until they are very tender, about 10-12 minutes. Drain thoroughly to remove as much moisture as possible.

Step 2

Transfer the steamed cauliflower to a food processor, and pulse until it achieves a smooth, mashed consistency.

Step 3

Place the mashed cauliflower into a clean kitchen towel and squeeze out any remaining liquid.

Step 4

In a mixing bowl, combine the drained cauliflower, almond flour, Parmesan cheese, egg, garlic powder, salt, and black pepper. Mix until a dough forms.

Step 5

On a lightly floured surface, roll sections of the dough into long cylindrical shapes (about 1 inch in diameter), and then cut into 1-inch pieces to form the gnocchi.

Step 6

To create ridges, gently roll each piece over the back of a fork.

Step 7

In a large non-stick skillet, heat the olive oil over medium-high heat. Add the gnocchi in batches, frying them until golden and crispy on all sides, about 5-7 minutes.

Step 8

Remove the gnocchi from the skillet and set aside.

Step 9

In the same skillet, reduce the heat to medium and add the butter. Allow it to melt and begin to brown slightly.

Step 10

Add the fresh sage leaves to the butter. Let them fry until they become crispy and fragrant, about 2 minutes.

Step 11

Return the fried gnocchi to the skillet and toss to coat well in the sage butter sauce.

Step 12

Serve immediately, garnished with additional Parmesan if desired.
