Ingredients

  • 1 cup Almond flour
  • 0.25 cup Coconut flour
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 2 tablespoons Granulated erythritol
  • 2 whole Large eggs
  • 0.25 cup Unsweetened almond milk
  • 1 teaspoon Vanilla extract
  • 0.5 cup Coconut oil

Directions

Step 1

In a medium-sized mixing bowl, combine the almond flour, coconut flour, baking powder, salt, and granulated erythritol. Mix well to ensure there are no lumps.

Step 2

In a separate bowl, whisk together the eggs, unsweetened almond milk, and vanilla extract until smooth.

Step 3

Gradually add the wet ingredients to the dry ingredients, stirring until a thick dough forms.

Step 4

Shape the dough into small balls, about 1 inch in diameter. You should have approximately 12-16 balls.

Step 5

In a deep frying pan, heat the coconut oil over medium-high heat until it reaches about 350°F (175°C). You can test this by placing a small piece of dough in the oil; it should sizzle immediately.

Step 6

Fry the dough balls in batches, being careful not to crowd the pan. Cook them until golden brown on all sides, about 2-3 minutes per side, turning occasionally.

Step 7

Using a slotted spoon, remove the fried dough balls from the oil and place them on a plate lined with paper towels to drain excess oil.

Step 8

Allow the dough balls to cool slightly before serving. Optionally, dust with a little more erythritol or cinnamon for added flavor.
