Ingredients

  • 8 pieces large iceberg or romaine lettuce leaves
  • 1 medium cucumber
  • 1 medium red bell pepper
  • 1 medium carrot
  • 12 pieces cherry tomatoes
  • 1 medium avocado
  • 0.5 medium red onion
  • 2 tablespoons fresh parsley
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons extra virgin olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Wash and dry the lettuce leaves thoroughly. Set them aside.

Step 2

Peel the cucumber and slice it into thin strips or rounds, as preferred.

Step 3

De-seed and thinly slice the red bell pepper.

Step 4

Peel and julienne the carrot.

Step 5

Halve the cherry tomatoes.

Step 6

Cut and scoop the avocado flesh. Slice it thinly.

Step 7

Finely slice the red onion.

Chop the fresh parsley finely.
