Ingredients

  • 400 grams fresh green beans
  • 200 grams cherry tomatoes
  • 0.5 small red onion
  • 30 grams fresh parsley
  • 1 large lemon
  • 60 ml extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • 1 small garlic clove
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Start by preparing the green beans. Trim the ends and cut them into bite-sized pieces.

Bring a large pot of water to a boil and add a pinch of salt. Prepare an ice bath by filling a large bowl with ice and water.

Step 3

Blanch the green beans by adding them to the boiling water for 3 minutes, until they are vibrant green and just tender.
