Ingredients

  • 500 grams asparagus
  • 200 grams cherry tomatoes
  • 0.5 medium red onion
  • 30 grams fresh parsley
  • 1 large lemon
  • 60 milliliters olive oil
  • 1 teaspoon dijon mustard
  • 1 clove garlic
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Wash the asparagus under cold water and snap off the woody ends. Bring a pot of water to a boil and prepare an ice bath. Blanch the asparagus in boiling water for 2 minutes until bright green and slightly tender, then immediately transfer them to the ice bath to cool. Once cooled, drain and pat them dry with a kitchen towel. Cut the asparagus into 1.5-inch pieces.
