Ingredients

  • 15 oz canned fava beans
  • 2 tbsp olive oil
  • 2 large garlic cloves
  • 1 cup plain Greek yogurt
  • 1 tbsp lemon juice
  • 0.5 tsp ground cumin
  • 0.5 tsp sea salt
  • 0.25 tsp black pepper
  • 2 tbsp fresh parsley
  • 1 tbsp fresh mint

Directions

Step 1

Drain and rinse the canned fava beans thoroughly under cold water.

Step 2

In a medium saucepan, heat olive oil over medium heat.

Step 3

Mince the garlic cloves and add them to the saucepan. Saute for 1-2 minutes until fragrant, being careful not to burn the garlic.

Step 4

Add the drained fava beans to the saucepan and stir to combine with the garlic.

Step 5

Heat the fava beans for about 5 minutes, stirring occasionally until warmed through.

Step 6

Season the beans with ground cumin, sea salt, and black pepper. Stir well to coat evenly with the seasonings.

Step 7

In a mixing bowl, combine the Greek yogurt and lemon juice. Mix until smooth and well combined.

Step 8

Chop the fresh parsley and mint leaves. Reserve a small amount for garnish and add the rest to the yogurt mixture.

Step 9

Remove the saucepan from heat and let the beans cool slightly for 2-3 minutes.

Step 10

Fold the warm fava beans into the yogurt mixture until fully coated.

Step 11

Transfer the mixture to a serving dish.

Step 12

Garnish with the reserved chopped herbs and an additional drizzle of olive oil if desired.

Step 13

Serve immediately, or refrigerate and serve chilled.
