  • 6 large eggs egg whites
  • 1 cup spinach
  • 0.5 cup cherry tomatoes

Directions

Step 1

Begin by preparing the vegetables. Wash the spinach and cherry tomatoes. Slice the cherry tomatoes in halves and mushrooms into thin slices. Chop the fresh parsley for garnish.

In a mixing bowl, separate the egg whites from the yolks and set the yolks aside for another use. Whisk the egg whites until they are frothy and have soft peaks.
