Ingredients

  • 1 medium head cauliflower
  • 2 tablespoons olive oil

  • 1 cup, drained and rinsed canned black beans
  • 1 small, chopped red bell pepper
  • 1 teaspoon ground cumin
  • 0.5 teaspoon chili powder
  • 0.25 cup, chopped fresh cilantro
  • 1 medium, juiced lime
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Prepare the cauliflower by removing the stem and leaves. Cut it into florets and pulse in a food processor until it resembles rice. You should have about 4 cups of cauliflower rice.

Step 2

Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté for about 3 minutes or until it starts to soften.
