Ingredients

  • 2 cups shredded cooked chicken breast
  • 8 pieces low-carb tortillas (6-inch each)
  • 0.5 cup chopped onion
  • 2 cloves minced garlic
  • 0.25 cup chopped cilantro
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons olive oil
  • 0.5 cup sour cream
  • 0.5 cup salsa
  • 0.5 cup guacamole

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the shredded chicken, chopped onion, minced garlic, chopped cilantro, ground cumin, chili powder, salt, and black pepper. Mix until all ingredients are well combined.

Step 3

Lay out each low-carb tortilla, and place about 1/4 cup of the chicken mixture on one side of the tortilla. Tightly roll the tortilla around the filling to form a flauta.

Step 4

Place the flauta seam-side down on the prepared baking sheet to prevent it from unrolling.

Step 5

Once all tortillas are filled and rolled, brush the tops with olive oil to help them crisp up in the oven.

Step 6

Bake in the preheated oven for 20-25 minutes, or until the flautas are golden brown and crispy.

Step 7

Remove the flautas from the oven and let them cool slightly before serving.

Step 8

Serve the flautas with sour cream, salsa, and guacamole on the side for dipping.
