Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a food processor, combine the almond flour, coconut flour, xanthan gum, and salt. Pulse a few times to mix these dry ingredients together.
Add the chilled, cubed butter and cream cheese into the processor. Pulse until the mixture resembles coarse crumbs.
