Ingredients

  • 2 cups Almond flour
  • 0.5 cup Coconut flour
  • 2 teaspoons Xanthan gum
  • 0.75 cup Unsalted butter, cold and cubed
  • 2 tablespoons Cream cheese, cold
  • 1 large Egg yolk
  • 3 tablespoons Cold water
  • 3 large Eggs
  • 0.5 cup Cheddar cheese, grated
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Chives, chopped
  • 1 large Egg wash (1 egg beaten with 1 tablespoon of water)

Directions

Step 1

Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

In a food processor, combine almond flour, coconut flour, and xanthan gum. Pulse to mix.

Add in the cold, cubed butter and cream cheese. Pulse until the mixture resembles coarse crumbs.

Add the egg yolk and pulse until combined. Gradually add cold water, one tablespoon at a time, pulsing until the dough comes together. Avoid overmixing.

Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
